You're hesitating between rockclimbing and watersports? Why not combine the two and go canyoning. The mountainous Swiss canton of Valais is ideal for canyoning. There are many possibilities close to Verbier. There's even a company that takes you down by moonlight.
Go with a specialist to maximize your thrills in a safe environment. Also the canyoning provider will usually supply the essential equipment: harness, booties, helmet, and wetsuit. There are half day and full day options.

Marécottes 3 canyons (Val d'Illiez)
"La Salanfe" - Perfect for friends or families and suitable for
beginners, there is a footpath alongside this route so you can choose
to avoid certain sections (or have another go on the most fun ones!)
This route has lots of jumps, slides and even a tyrolienne over the
waterfall. Best time of year = mid-April to end October. Timing: half-day trip. "Triege"
- Jumps, slides, and rappels, this route is a little more sportive than
"La Salanfe" and requires a little experience. It takes you through a
narrow gorge. Best time of year = mid-June to end October. If you do not go with a canyon provider, you need authorisation to canyon here: 41 (0) 27 771 7250. It's graded (Swiss): 3a3IV. Timing: half-day trip. "Tinda"
- For experienced cayoneers, this granite-lined canyon has one slide
and rappel after the other. Best time of year = mid-June to end
October. Timing: half-day trip.

La Raspille
This canyon located about a 15 minute drive from Sion between
the ski resorts of Crans Montana and Aminona, requires a little
physical fitness and is full of jumps, slides, and rappels. It's graded (Swiss): v4.a4.III. Best time of year = mid-June to end
October. Timing: 4-5 hours. La Morge
This canyon is about a 10 minute drive from Sion and is complete with jumps and slides. Best time of year = mid-June to end
October. Timing: 4-5 hours. Les Gorges de Daillon
This
vertical canyon with fast running water is about a 10 minute drive from
Sion and is complete with jumps and slides and rappels. Best time of year = mid-June to end
October. Timing: 4 hours.

Barberine & Giettroz
On
the Swiss/French border, before you head into the Chamonix Valley are
the Barberine and Giettroz canyons. Barberine is excellent for families
and groups. It is also very convenient, requiring only a 20min walk
from the car. Gorge de la Massa
Start
from Brig, close to the Blatten village, at the foot of the impressive
Aletsch glacier and the Gebidem dam. There's an 8m jump and a 30m
"Cathedral" rappel. Best time of year = mid-June to end
October. La Rogne In
the Valley leading up to the Col du Sanetsch this narrow canyon offers
jumps and rappels and it takes about 2-3 hours to descend the 800m in
the forest. Best time of year = mid-June to end
October. Gorge de la Salentse
Deep
vertical canyon in a wilderness environment, the Gorge de la Salentse
is a difficult route. It takes 3-4 hours to descent the 400m vertical.

There are also many canyons close by in the Val d'Aoste, France, and other Swiss cantons. There are even tour companies based out of Valais that will take you there.

Simplon, the granite Gondo canyon offers a magnifescent canyoning
descent, graded (Swiss) v3a3III.

Cascades de Favrands (Chamonix Valley)
Take a trip to Chamonix (about 1 hours drive). This canyoning route
starts under the Plan d'Aiguille and descends 1500m to the valley. It's
graded TD/2 (French, hard), is best in the autumn and takes 7hrs.
